I don't go big on Easter (I have bought Lexi 3 tin I don't go big on Easter (I have bought Lexi 3 tiny eggs) but I do bake these cookies with her every year. ⁠

We love this recipe because it is so easy to follow that Lexi can make them on her own.⁠
⁠
MAKES 12 BIG COOKIES⁠
⁠
INGREDIENTS⁠
2 cups all-purpose flour⁠
1/2 teaspoon baking powder⁠
1/2 teaspoon salt⁠
3/4 cup unsalted butter, melted⁠
1 cup packed brown sugar⁠
1/2 cup white sugar⁠
1 Tbsp vanilla essence⁠
1 egg⁠
1 egg yolk⁠
2 cups broken up chocolate chunks⁠
⁠
METHOD⁠
Preheat the oven to 180 degrees (celsius) and line your cookie tray with baking paper.⁠
Combine the dry ingredients and set them aside.⁠
In a medium bowl, cream together the melted butter, brown sugar, and white sugar until well blended.⁠
Beat in the vanilla, egg, and egg yolk until light and creamy.⁠
Mix in the sifted ingredients until just blended.⁠
Stir in the chocolate chips by hand using a wooden spoon.⁠
Roll a handful of the mixture and flatten it slightly. They should be 2-3cm apart on your baking tray.⁠
Bake for 15 to 20 minutes until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.⁠
⁠
OPTIONAL⁠
Use white chocolate or dark chocolate and swap out 1 cup of chocolate for a cup of nuts of your choice.⁠
