This smoothie is a favourite and a staple in our household. I usually make a large batch and freeze them in glass bottles for a convenient breakfast or meal on the go. Although it is best fresh. For kids who won't drink it, this recipe makes really refreshing ice lollies.
MAKES 3 SERVINGS (300ml each)
1 cup packed spinach or kale (whatever is in my garden that day)
2 sticks celery
1 large cucumber
a small handful parsley
2 granny smith apples
juice of 1 lemon
a finger of ginger (grated or finely chopped)
Layer all the ingredients in the blender in the order listed.
Top with a cup of water (you can adjust the amount depending on how watery you like your smoothie). Add ice if drinking immediately.
Blend until smooth and enjoy.
