We are huge fans of crisps in our house! As I mentioned before in my post about movie night, we have been looking for healthier alternatives. They are also a great playdate snack. I always have kids asking me for crisps and have never had any of them complain when I have given them a bowl of these.
They are easy to make and delicious. And they keep really well, but I can guarantee that you won't have any left to keep.
My favourite kitchen tool is my mandolin. I highly recommend slicing the sweet potato with a mandolin so that you get then uniformly thin. This helps with the crisping. However, if you don't have one, just make sure that you slice them thin enough that they will still crisp.
Pre-heat your oven to 120 degrees (celisius).
Wash and dry your sweet potatoes, then thinly slice.
Toss with a little olive oil to coat.
Lay slices of sweet potato flat on a wire rack and sprinkle with salt to taste.
Put in the oven for 2 hours (or until golden and crisp), turning half way.
Cooking time depends on your oven. I have found that 2 1/2 hours is better in my oven. If the potato is golden and starting to curl, but not completely crisp, remove from the oven and let them sit for 10 minutes. They usually crisp in the middle.
