Pina Colada For Breakfast?!

Is breakfast a struggle in your house?

Lexi is a great eater. She's adventurous and she eats a decent amount.... usually. But breakfast is a constant struggle. She's dug in her heels and refuses to eat oats or anything with eggs. She's gone off my green smoothies (unless they're frozen into ice lollies) and berries with yoghurt are no longer an option. I've tried tempting her with toast (with the best sourdough bread) with various toppings only to have her pull up her nose. 

 

I gave this a lot of thought and realised that they only way I am going to win this battle is by giving her non-traditional breakfast foods presented in a more appealing way. One thing that always appeals to Lexi is a mocktail with all the bells and whistles. What lends itself better to this than a pina colada? Carved out pineapple with an umbrella is enough to tempt any kid, right?

 

Well, it worked!

 

I not only hit the jackpot in terms of getting Lexi to have something for breakfast, but it is nutrient dense and filling. 

 

Pineapple is one of those amazing superfoods that is good for everything. It's great for immune support (something all kids need), bone strength, eye health, digestion etc. 

 

In addition to having lots of vitamin C, pineapple contains bromelain which may help reduce mucus in the throat and nose (according to a study done at the University of Maryland Medical Center). So if your child has a cough, try some pineapple chunks. For those with allergies, you may want to consider incorporating pineapple into your diet more regularly to reduce sinus mucus long term. 

 

Then there's the coconut! Coconuts are highly nutritious, rich in fiber, and packed with essential vitamins and minerals. It provides a natural source of quick energy that kids need. And, like pineapple, it supports immune system health with it's powerful anti-viral, anti-bacterial, anti-fungal, and anti-parasite properties.

 

 

Overnight oats are idea for those that love oats but don't want to eat them in summer when it's hot. I highly recommend you try pina colada overnight oats. They're quick and easy to prepare and a great fix on a busy morning. I love them because the first whiff of pineapple and coconut when you open the jar reminds me of being on a holiday somewhere tropical.
