Holiday Traditions

We all have special family traditions around the festive season. A favourite of mine was always baking sugar cookies with my mom and sisters. It is a tradition that I carried on with Lexi, even last year when we travelled most of December and January. 

Flipping through Instagram, Pinterest and Facebook I am constantly looking at pictures of yummy looking Christmas bakes. Yet it was only this morning, when I opened TimeHop, that I realised we haven't baked cookies yet this year! (That's not to say Lexi hasn't done any baking, she made these great gingerbread cookies at Bright Young Chefs)

 

Time to remedy the situation!

 

 

INGREDIENTS

 

1 1/2 cups butter, softened

2 cups white sugar

4 eggs

1 tsp vanilla essence

5 cups all purpose flour

2 tsp baking powder

1 tsp salt

 

METHOD

 

In a large bowl, cream together butter and sugar until smooth.

Beat in eggs and vanilla.

Stir in the flour, baking powder, and salt.

Cover, and chill dough for at least one hour (or overnight).

 

Preheat the oven to 200 degrees (celsius).

Roll out dough on floured surface 1/2 cm thick.

Cut into shapes with any cookie cutter.

Place cookies 2cm apart on ungreased cookie sheet (I use baking paper instead).

Bake 6 to 8 minutes in preheated oven.

Cool completely.

 

This recipe is great if you need to make a LOT of cookies. Depending on the size of your cookie cutters this recipe makes approximately 5 dozen cookies, which makes them perfect for gifting.

 

Now everyone knows they're getting cookies from us..... good night!
