Refreshing Spring Popsicles

Happy Spring everyone! I can’t help but feel happy. It’s Spring, the weather is great and I am surrounded by the people I love.
To celebrate the warmth of Spring I made a batch of cucumber mint popsicles.
They are super easy and good for you. Cucumbers are not only great for staying hydrated, but they’re good for your muscles and they transport calcium to your bones. The peel itself contains silica that makes for beautiful skin and hair. So eat up!
INGREDIENTS
1 cucumber
1/4 cup light maple syrup (if you can’t get good organic maple syrup, use honey)
1/2 cup lemon juice
1 Tbs mint leaves, roughly chopped
2 1/2 cups water
Thinly sliced cucumber for garnish
METHOD
Roughly chop up your cucumber and blend in a food processor.
Strain the cucumber through a fine sieve and discard the pulp (Lexi ate ours).
Combine the juice from the cucumber with the remaining ingredients and whisk well.
Place your thinly sliced cucumber in your popsicle molds.
Divide the mixture between your popsicle molds and freeze.
SERVES 8
For an adult version add vodka to taste.
