When kids (and Dads) want to spoil Mom on Mother’s Day, they want to know she’s going to love what they’re making. Knowing that they won’t even have to break a sweat it’s going to be so easy is just an extra bonus!

The South African Mushroom Farmers’ Association shared a few such recipes with me. My favourite is the boerewors stuffed mushroom!

Lexi already had a practice run and made these for me.

As you know, we love recipes that kids can make themselves. It makes independent children.

What mom doesn’t want kids who can cook and share the load?

Why Mushrooms?

We all know that moms are superheroes. They perform super heor worthy acts every day. So they need superfoods to give them the strength to keep doing this.

Mushrooms offer an abundance of health benefits. They are packed with antioxidants, vitamins, and minerals.

Moms are normal people with superhero skills. Mushrooms are a normal food with superfood nutrients. And because moms don’t get sick days they need mushrooms to help improve their immune systems.

Some varieties of mushrooms contain lentinan and beta-glucans, both of which are good for improving your immune system.

Mother's Day Brunch

Boerewors Stuffed Mushrooms

Prep Time 10 mins
Cook Time 20 mins
Total Time 30 mins
Course Breakfast, Side Dish, Snack

Ingredients
  

  • 2 tbsp coconut oil
  • 250 g boerewors removed from casings
  • 12 Portabellini mushrooms cleaned, stalks removed and reserved
  • 1 red chilli finely chopped
  • 150 g full-fat cream cheese
  • ¼ cup flat leaf parsley chopped

Instructions
 

  • Preheat the oven to 200°C.
  • Heat the coconut oil in a pan and brown the boerewors mince, stirring often. Approximately 7 minutes.
  • Finely chop the mushroom stalks and add to the pan with the chilli. Cook for an additional 5 minutes.
  • Stir in the cream cheese and parsley.
  • Season to taste.
  • Pack the filling into the 12 mushrooms caps, place in the oven and bake for 8-10 minutes until browned and bubbling.
