This has to be one of the easiest recipes ever. So easy in fact that I gave Lexi the recipe card and hightailed it out of the kitchen while she made it. I went back in to take a picture but didn’t want to jinx it so I left again quickly.
I am really enjoying the fact that Lexi is now able to read. She did all of this on her own. I notice that she did amend that recipe slightly (that’s my girl!). Instead of using oats she used flour and she added an extra banana. The extra banana made the final result a bit more moist than usual but still delicious.
3 bananas, mashed
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla essence
1/2 cup oats (you can mill them if you want, I do it in a coffee grinder) 1/4 cup honey
Preheat the oven to 180 degrees (celisius) and grease and flour your loaf tin.
In a large bowl mix together all the ingredients.
Pour into prepared loaf tin.
Bake in the preheated oven for 45minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow to cool.
