Who doesn’t love a good chocolate brownie! While I usually try take regular recipes and make them healthier, this one is just not worth messing with. It’s rich, chewy and chocolatey. The perfect fix for a chocolate craving. Not everyone loves icing on brownies and it is totally optional, but I recommend a thin layer to add to the moist and chewy texture of these brownies.
Lexi loves these brownies so much that she has requested a brownie birthday cake. We’ve put together a plan, but I’ll share that with you after her birthday.
1 cup cocoa powder, unsweetened
1/2 cup melted butter
2 cups white sugar
1/4 tsp salt
1 cup all purpose flour
2 tsp vanilla essence
For the icing:
1/4 cup butter, softened 1/4 cup milk
1/4 cup cocoa powder, unsweetened
1 cup icing sugar
Preheat oven to 160 degrees C. Line one 33 x 23 cm (13 x 9 inch) pan with greased baking paper.
Combine the cocoa, melted butter, sugar, eggs, salt , flour and vanilla.
Mix until well combined. It should be very thick and sticky.
Spread mixture into the prepared pan. Bake for 30 minutes.
While the brownies are in the oven beat together all the icing ingredients until smooth.
Remove the brownies from the oven and wait 15 minutes.
Pour and spread the icing over warm brownies.
Cool completely before cutting into squares.
