Lunch is usually a quickly thrown together affair in our house. With lockdown I have felt more pressure to provide more carefully thought out lunches. I have reached the stage where I am lacking inspiration and finding it quite stressful. One of the recipes I always revert to when I feel uninspired is this easy, but very nutritious broccoli salad.
Why we love broccoli
Broccoli is packed with vitamins, minerals, and bioactive compounds. What do I mean bioactive compounds? Bioactive compounds are components of food that influence the physiological and cellular health of our bodies. They influence the bioavailability of the nutrients in our food, making it easier for our body to absorb vitamins and minerals.
We encourage our children to eat carrots for their eyes. But did you know that broccoli contains high amounts of antioxidants lutein and zeaxanthin that prevent oxidative stress and repair damage in your eyes?
Parents often ask me about how they can prevent constipation in their children. Broccoli is extraordinarily rich in fibre and antioxidants, both of which support healthy bowel function and digestive health. A study in mice on a broccoli diet found reduced levels of inflammation in the colon, as well as favourable changes in the gut bacteria. *
This is a quick salad that everyone loves. It is also perfect for taking to potlucks when you need a salad. Broccoli salad can be adapted according to what you have at home. I often add zucchini, cauliflower, and celery.
- 8 cups broccoli
- ½ red onion
- 1/3 cup dried cranberries
- 1/3 cup sunflower seeds
- ½ cup bacon bits, fried until crispy
- 3 Tbs apple cider vinegar
- 1 cup mayonnaise
- Salt and pepper to taste
- Whisk together vinegar, mayonnaise, salt, and pepper. Set aside.
- In a large bowl combine all the ingredients.
- Pour the dressing over and mix well.
- Refrigerate for one hour before serving. This allows the flavours to develop.
